    The outer skin is removed, but some mucilage remains on the bean during the initial drying phase before being hulled.
  • Flavor Character:
    Full-bodied (thick), low acidity, with dominant earthy, chocolate, herbal, and spicy notes

Fully Washed Process

A cleaner approach that highlights the elegant and complex acidity of the Toraja highlands.

    The beans are thoroughly washed to remove all mucilage before the drying process begins.
